Scottish Ale - (ale) Scottish Ales traditionally go through a long boil in the kettle for a caramelization effect. This produces a deep copper color and a higher level of unfermentable sugars which create a rich mouthfeel and malty flavors and aromas. Not much hop character. Some smoky character is common, but mostly this is a malty beer with caramel and toffee flavors. Examples: Belhaven Scottish Ale.
